~ The great Aussie roadtrip ~ It's something we had dreamed of doing for a long time. Crossing the country from west to east, 1200kms across the Nullarbor, some of Australia's most isolated and remote country! And we just did it! An epic feat for an old Kombi, even more so carrying this huge sign on the roof!
For those of you who have been following our route, we decided to high tail it through the south-west region over to South Australia. We've had limited service for a while, and since it was one heck of an experience, we'll get to sharing some more of that with you soon! ✌️

As the days grow shorter, we are spending more hours inside. Since Jess works more traditional business hours, she likes to relax in the evenings with Netflix and wine. I’m more of a night owl and often work on commissioned drawings or package prints late into the night

Rainy days call for soup - a garlicky lemon lentil soup on this particular day. When I was growing up lentil soup was my mom's go to when we had visitors. Full of carrots, onions, potatoes, tomatoes, garlic and herbs, served with a side of fresh bread, it was my favorite hearty feel good meal. A particularly memorable lentil soup meal occured when we had a big group of people over and my mom threw a can of stewed tomatoes into the pot and then realized they were spoiled. With just minutes until the guests arrived and no plan B, we frantically picked out every last piece of tomato and then spent the whole dinner trying to decide if it tasted weird 😁 The following is the wonderful lentil soup Justin and I are having for dinner - a recipe my mom recently shared with me.
Persian Lentil Soup
1 cup lentils rinsed
8 cups vegetable stock
1 tablespoon olive oil
1 large onion finely chopped
4 garlic cloves crushed
1 can stewed tomatoes (15 oz)
2 teaspoons salt
1 bunch of parsley finely chopped
1/2 teaspoon pepper
1/4 teaspoon cayenne
2 tsp sumac
3 tsp 7-spice
1/4 cup basmati rice (optional, uncooked)
juice of 1 lemon
Sautée garlic and onions in olive oil. Add vegetable stock and lentils and simmer on medium low for 25 min. Add tomatoes, parsley, rice, and all seasoning and simmer on low for another 25 minutes or until rice and lentils are tender. Taste and add more salt, lemon, and pepper as desired. Garnish with feta and more chopped parsley.

This was the last BIG step in our build!
We still have plenty of small trim bits to finish off, but the one big job that we needed to address was getting our heater installed.
It's also a job that myself and Maddy have been avoiding, because it's difficult and we don't know what we're doing, haha. So Dom, Maddy's dad, tackled it like a boss by measuring and cutting the holes, extending the exhaust and intake tubes because our insulation was too thick for the stock parts, wiring in the ignition, and over all owning it!
We still haven't fired our furnace up as we're waiting on some important propane parts to arrive, but the main surgery is done and dusted!
