A beautiful, heart-felt journey through Colombia by Chef Leo and Laura by way of their Cycle Biome project, the study and discovery of biomes and ecosystems in Colombia for culinary use. The new tasting menu (just 2 days old!) was an exciting and delicious adventure through the fascinating expanse of indigenous and sometimes forgotten Colombian ingredients, delivered in an impeccable fine dining setting. Quite a few of the ingredients were new to us too, like limonero ants and ponche (wild rodent meat!) Congratulations again Chef Leo for achieving the Best Female Chef in Latin America by The World’s 50 Best!
