So collards 🌱 may not be the first food you think 🤔 of when it comes to being healthy, which makes them WILDLY underrated. Check out 👀 these benefits:

* 2 lbs collard greens🌱
* 4 -5 garlic cloves, minced🥚
* 1 large onion, chopped
* 3 cups vegetable stock🥃
* 1 teaspoon salt (to taste)
* 1 teaspoon smoked sweet paprika♥️
* 1⁄2 cup apple cider vinegar🍎
1. Wash greens well🌱, submerging in a sink full of cold water 💦 to remove any dirt and grit. Drain well. Cut off the stems right where the leaf 🍃 starts. Stack about 5-8 leaves on top of eachother, then roll lengthwise. Cut🔪 rolled up leaves into 1" slices widthwise. Repeat until all the greens are done, and add to a large pot.
2. Add all other ingredients. Cover and bring to a boil over high heat🔥, then reduce heat to a simmer. Simmer for 45 minutes or until greens🌱 are extremely tender. Serve hot, using a slotted spoon to drain the liquid from the greens.

#dinner homemade white beans and collard green soup. It's so easy. I used half navy and half northern beans and boiled them for a while first. I smashed almost half of a whole garlic and grilled some onion in a little butter with garlic. Chopped carrots and the collard greens and threw them in the pot with the beans. Lawd hammercy!!! This, this stuff right here gave me life. Talk about THE best fried chicken 🍗 and collards. So much love and soul went into my digestive system. And yes that right there is a sweet potato biscuit...I found love.
Acorn squash and black bean burger:
Heat 1 tbsp avocado oil in a skillet over medium heat and add 2 cups cubed acorn squash. Cook for 10-20 min until soft but not mushy 👌
Next add 1 cup diced onion, 1/2 cup diced green bell pepper, and 1 cup spinach. Sauté for another 5 min until soft. Add 2 cups cooked black beans and 3 cloves minced garlic. Cook for 2-3 more minutes. 👩🍳Remove from heat and let cool for a few min.
Transfer veggie mixture to a food processor. Add 1 tsp cinnamon, 1 tsp smoked paprika, 1 tsp cumin, 1/2 tsp nutmeg, 1/4 tsp cardamom, 1/4 tsp cloves, 1/4 tsp coriander, 2 tsp ground psyllium husk, 2 tbsp water, and 1 tsp sea salt. Pulse 20-30 times until blended but still has texture. 💁♀️
Form into patties and cook on low in a skillet with avocado oil for about 15 min or so each side. This makes about 8-9 burgers 🍔
Roughly chop cabbage and toss in avocado oil and sea salt. Roast at 400F for 30-35 min until crispy 😆
Blanched collard leaves:
Cut stems off the end of the collard leaves and par down the stems in the middle of the leaves. 🍃
Add each leaf one at a time to simmering water for about 30 sec. Transfer to a bowl of ice water for 10 sec, then remove and pat dry with a paper towel 💦
Layer turkey bacon, guacamole, black bean and acorn squash burger cut in half, roasted cabbage. Fold in ends of leaves and roll together.
