Current meal obsession: pad thai 💃🏻 Made this bad boy with stir-fried veggies in @chosenfoods sesame oil, tossed them with rice noodles and chickpeas, added on some toasted almonds, spicy peanut dressing & micro greens- so simple, SO good (aka my life motto 😎🙋🏻) takes twenty minutes & leaves me so satisfied- nothing better 💃🏻
actually becoming slightly concerned that I’m going to turn a yellow/ orange hue with all the winter vegetables ive been consuming #betaglow 😅🤗 but im v. into this butternut squash soup thing and i don’t even like soup 🍲 but topped with some greens for good measure + cranberries & pistachios...this is what you need to do. Go to my blog... or since laziness prevails here’s the recipe 👇🏼 .
roast up a whole butternut squash at 400 for about 45-50 mins. Cut into cubes. Add to your vitamix w/ any spices. I did turmeric, cinnamon, sea salt, pepper, few pinches of nutmeg, 1/4 cup nutritional yeast & started off with about 2 cups of almond milk or use coconut milk. Blend until supperrr creamy. Add more milk for desired consistency & adjust spices. Heat back up on stove if need. Eat it. Usually top mine with spinach, nuts, or sautéed apples & sometimes I add in collagen 👌🏻
