My heart is so full after a fun weekend spent catching up with friends, apple + pumpkin picking (+ pie baking) 🍎🎃, and soaking up lots of sunshine (it's been unseasonably warm in DC) ☀️. Sweet & savory sweet potato toasts giving me life on a Monday! 🙌🏻💥🤤 Seriously tho, these might be my favorite way I’ve ever made or eaten sweet potatoes. Cut into circles, drizzle with avo oil and roast at 425° for 20ish minutes, flipping once. Finish three ways: 
1.) Homemade coconut cream (Young coconut meat + a little water blended in food processor) + autumn walnut dukkah
2.) Parsley-pumpkin seed pesto, melon radish, sprouts + hazelnut dukkah
3.) Homemade black currant-blue majik coconut cream with frozen berries and dried cornflowers.

I've been {mostly} staying away from grains, so instead of boring old, grain -loaded toast for breakfast, I made this scrumpdillyicous plate of avocado sweet potato toast.

Here's how I did it: in a hot pan sear 4 slices of left over baked sweet potato until browned, flip and sear the second side (leave the skins on, they get extra crispy and delicious.

While those are cooking, peel and segment 1 orange. Smash half of the orange with the avocado. 
Plate the sweet potatoes, top with the avocado. Arrange remaining orange segments and a few tomatoes on the plate. Add in a big handful is Arugula and a few fermented veggies, pepitas and hemp seeds.

Drizzle the whole pate with a tablespoon or two of melted ghee, flaky sea salt and fresh black pepper.

Woke up today on day 86 REALLY wanting oatmeal! Went into the kitchen and made this up. It needs a bit more recipe development, but it was still super yummy, warming, and filling! I'm calling it pumpkin spice cauliflower porridge 😊: riced cauliflower, ghee, puréed pumpkin, homemade almond milk, eggs, @vitalproteins collagen peptides, chia seeds, salt, Ceylon cinnamon, and pumpkin pie spice. I topped a bowl of it off with chopped almonds and a chopped date. 🍚 🎃

Quick meal prepped breakfast thrown together before work today--Pork tenderloin with AIP BBQ sauce made in the Instantpot 🐷, roasted kabocha squash 🎃, sautéed greens 🍃, cilantro 🌿, parsley 🌿, sautéed garlic zucchini 🥒, 1/2 avocado 🥑

Happy chrysanthemonday! Made this sweet potato turmeric smoothie bowl to match these gorgeous autumnal mums. I used a roasted Japanese sweet potato instead of an orange sweet potato and I love how it let the color of the turmeric really take over the whole bowl. 💛🌼
Recipe:
- 1/2 a medium sweet potato (any kind)
- 1 raw carrot (I get the tricolored ones from Trader Joe’s, they’re the same price and way prettier to cut into)
- 1 scoop @alohamoment vanilla protein powder
- 1 scoop @vitalproteins collagen
- 8-12oz almond milk (made my own this time💪🏽)
- 1 tsp pumpkin spice
- 1 tsp turmeric
- dash of cinnamon
- dash of black pepper (to increase the bioavailability of the curcumin in the turmeric)
Toppings:
-  my fave @wholeme cinnamon banana chip grain free granola
- coconut shreds
- chia seeds
- cacao nibs
- dried mulberries
(Yes, I ate all of this. Yes, I do wish I had slowed down bc I’m SO FULL I’m gonna burst lol. No, I don’t have any regrets)
