I get a bit obsessive over recipes. When I decide I want to make something, I’ll keep at it until the flavors are *perfect.* My chicken Tikka Masala is close, but not quite there 🤷🏼♀️
I have some ideas about what to try. The flavors are nearly spot on—just missing a little “oomph.” I’ve changed the recipe a lot from the original that’s on my old blog. That recipe has had good reviews, but I think it was closer to butter chicken...and I was never completely happy with it. ...Hopefully I’ll nail it soon! 🙌🏻

I’m having fun in the kitchen developing new recipes to share with you guys! Today I tried achari chicken which is a thick masala chicken curry with pulverised lime and mango pickle added to it! The pickled lime and mango bring an unusual flavour as you don’t expect the chicken to have a delicate flavour of pickle but then you can’t stop taking spoonfuls of it! The spices which are added to the pickle really help elevate this full bodied, voluptuous chicken achari!
Grilled Black Spiced Beef from Montana’s own @yellowstonegrassfedbeef is on the menu for this wintery weekend. Rubbed with black spice masala, that's black and green cardamom, cumin and fennel served with charred broccolini and coriander cream curry with tomato apple chutney.
