🗓Thanksgiving is this week and if you are in need of some keto friendly dishes have no fear! This week we will be releasing a recipe everyday up until Thanksgiving!
✳️Green Bean Casserole
👩🏼‍🍳Ketogenic Chef: @mommalowcarb
8️⃣Servings: 8
⏳Prep Time: 15 min
⏰Cook Time: 25 min

Ingredients:
28 ounce can of green beans
1/2 of a small onion, diced
3 cloves garlic, minced
4 slices of thick bacon
8 oz cream cheese, softened
1/2 cup chicken broth
Parmesan cheese
Fried onions (optional)

Instructions:
1️⃣Preheat oven to 350 degrees.
2️⃣Spray a 2 quart casserole dish with non-stick spray.
3️⃣Heat a large skillet over medium heat and fry bacon until crisp.
4️⃣Remove bacon from pan, chop, and reserve the grease.
5️⃣Add onions and garlic to the bacon grease and saute for about 5 minutes, stirring occasionally. Add cream cheese and chicken broth.
6️⃣Heat and stir this mixture until smooth.
7️⃣Add green beans to pan and mix well.
8️⃣Pour mixture into greased casserole dish and sprinkle with parmesan cheese and bacon.
9️⃣Add a few tablespoons of fried onions as a garnish if you like.
🔟Bake for 25 minutes, or until brown and bubbly.

Yesterday I stared the process of making Pumpkin Pasties and today I got to bake them! I’m currently revisiting the world of Harry Potter thanks to Audible {#notsponsored} and if I have to hear about Hogsmead and feasts in the Great Hall one more time without making Harry Potter food I’m going to FREAK OUT! ⚡️⚡️⚡️⚡️⚡️⚡️⚡️
You might think this was easy. It WOULD be easy if you ate regular pie crust, but I don’t. I needed to make a keto friendly pie crust and the filling. But the dough for the crust needs quite a bit of time to set. Without the gluten in it there’s no “stick” so you need lots of time for it to stiffen so you can roll it out. But I got it! ✨✨✨✨✨✨
Sadly, the dough was really hard to work with. The more it warmed up the stickier it got. So the first couple from my first batch came out great and then from there they started to get a bit messy. The final ones are like the pasties from someone’s nightmare, but I’m sure they will taste great because the one I had from the first batch was awesome! ✨✨✨✨✨

Pepperoni Jalapeño Chips

24 small pepperoni slices
6 squares (2 ounces) of pre-sliced (“cracker cheese”) cheddar cheese
2 medium jalapeño, cut into 24 slices

Preheat oven to 350F. In a mini muffin pan, layer one pepperoni slice, 1/4 of one cheese square, and then one slice of jalapeño. Bake for 10 minutes on middle rack. Delicious served with optional sour cream. Recipe makes 2 servings for sharing. Don’t be greedy.

This morning was not a good food day as far as trying new things. I tried a ketocup today. I did not like it. Tried those almonds, had three and threw them straight into the trash. Idk why I keep trying flavored nuts, I always hate them. Lunch/snack was some crunchy broccoli from @traderjoes and a few sips of a Pepsi max bc I had a raging headache.
