Most people have a chili recipe that they use weekly and cook in big batches. Well, this one is mine!⠀
It’s tasty, full of flavor, and lasts great in the fridge. Every time I make this I have lunch and dinner done for me for at least a couple of days ahead of time.⠀ ⠀
1 pound ground beef⠀
1 pound hot Italian sausage⠀
1 medium green pepper⠀
1 medium yellow pepper⠀
1 medium white onion⠀
1 can 365 Organic Petite Diced Tomatoes with Jalapeno & Cilantro, (10-ounce)⠀
2 tablespoons curry powder⠀
2 tablespoons chili powder⠀
2 tablespoons cumin⠀
1 tablespoon minced garlic⠀
1 tablespoon coconut oil⠀
1 tablespoon butter⠀
1 teaspoon onion powder⠀
1 teaspoon salt⠀
1 teaspoon freshly ground black pepper⠀ ⠀

Holidays and cookie eating go hand in hand right? These Chocolate Dipped Keto Cookies are a sugar free, low carb alternative to your festive favourites. Why not make them as a gift for your loved ones this holiday season? Everyone needs a little cookie love in their life! ⠀
🍪 You’ll need:⠀⠀
1 ½ cups almond flour (150 g/ 3.5 oz)⠀
¼ cup almond butter (63 g/ 2.2 oz)⠀
2 tbsp powdered Erythritol or Swerve (20 g/ 0.7 oz)⠀
1 large egg⠀
1 tsp vanilla powder⠀
1 tbsp virgin coconut oil (14 g/ 0.5 oz)⠀
1 tbsp coconut butter (16 g/ 0.6 oz)⠀
1 tsp gluten-free baking powder⠀
pinch of salt⠀
90 g of 90% dark chocolate, melted (3.2 oz)⠀
✳️ Net carbs per cookie: 3.3 grams (recipe makes 10 large cookies)⠀⠀
1️⃣ Combine all the dry ingredients together in a mixing bowl (ground almonds, erythritol, vanilla, baking powder and optional salt).⠀
2️⃣ Add the soft coconut oil, coconut butter, almond butter and egg.⠀
3️⃣ Mix with hands until combined to form a dough. Place in a sandwich bag and chill in the fridge for 30 minutes.⠀
4️⃣ Roll the dough between 2 sheets of baking paper until about 1 cm (½ inch) thick. Cut out your cookies using a 6 ½ cm (2 ½ inch) diameter cutter and place on a greaseproof lined baking tray. Roll the dough back into a ball and repeat the rolling between 2 sheets of greaseproof and cutting step.⠀
5️⃣ Repeat until all the dough is used up. You should get about 10 cookies in total. Bake in the oven for 30 minutes until golden. Remove from the oven and allow to cool on a wire rack.⠀
6️⃣ Half dip the cookies into the melted chocolate. Place on a wire wrack to set.⠀

I didn’t feel like cooking lunch so take out it is! Medium traditional buffalo wings with celery and blue cheese from Buffalo Wild Wings. Less than 5 carbs for the entire medium size which will last me a couple meals. 😋
One of the things I'm still getting used to is that after years of pushing and trying and doing everything "right" according to standard regulations this year of keto has totally changed my body for the better. My figure keeps changing and sometimes my mind can't keep up. While I haven't had a massive loss like some people, nor am I as skinny as some, I'm keeping in my own lane and am happy to see my own progress. I just wish I had taken some before photos in leggings as the only ones I have are a bit too revealing! My waist is one of the most remarkable measures of change - I think I'm close to 10cm lost since Feb! My hips remain larger, but that's ok. It makes buying clothes a little tricky, but I guess it is just going to push me into my goal of sewing more in 2018! For no other reason than seeing what is possible, I'm going to keep pushing to gain more muscle because as vain as it is I am really loving seeing my stomach change and become defined, not swollen and soft. I hereby set my intention to continue to care for my body, not fight against it.

After making a Christmas pudding in the microwave last week I've seriously got into mug cakes. Check out this mini lemon cake for 2 - on the table in 3 MINUTES!!! I cooked it a dessert bowl and served it upside down with a lemon glaze. Still swoonin'...
Butterfly Lamb Roast done in BBQ (thermometer @ 70) 40 mins. Served with steamed asparagus, home grown Bok Choy and broccolini (sprinkled with Coconut Aminos and chili 🌶 flakes) .... need a big dose of green veges after our OS travels
🇬🇧 Halloumi stew with sun-dried tomatoes and spinach.
Butter to fry in
200g halloumi cheese
2 garlic cloves
10-15 sun-dried tomatoes
1 cup whipped cream
3/4 cup creme fraiche
2 tablespoons vegetable stock
1 tablespoon sambal
Salt and pepper
How to make it:
1. Fry the halloumi on medium heat in a non-stick pan.
2. Add all of the ingredients except for the spinach.
3. Let simmer for 10 minutes.
4. Add spinach and let simmer for another 2 minutes.
5. Serve with cauliflower rice. 😊🇬🇧

I made the @keto.connect#ketogingerbreadcake for the restaurant's potluck tomorrow night. Wasn't super impressed with the consistency of the batter but after it went into the oven I noticed on their IG post that someone had clarified that more butter was necessary than listed in the recipe. Now I know for next time! The cake still turned out pretty damn delicious albeit dense. 😊
