Happy Monday! Back to 5am workouts and back to work👊🏻 I prepped some waffles yesterday to have ready for me after the gym and dreamt about them the whole class 🤗🤗 Cinnamon + oat @kodiakcakes mixed with @mrm_usa cinnamon bun protein & topped with cacao nibs, @purely_elizabeth new seasonal dark chocolate strawberry granola, warmed blueberries, strawberries, sugar cookie PB, & vanilla @siggisdairy 😍🍓 Mhmm! #becksliveshealthy

I like to eat majority of my carbs before or after a heavy weight day (legs / back) because I am burning more calories those days, and my body needs them for fuel. I started putting half a scoop of protein in my pancakes to up my energy levels in the morning too .. and it tastes 💣#fridayeve

Well, I was teased by my talented friend @chubbyinshape (check out her gorgeous meals😍)! Her pancakes yesterday was divine so I decided to make protein pancakes for breakfast!

Pumpkin Peach 🍑 Pomegranate Pancakes 🥞
Used @kodiakcakes#glutenfree mix + coconut milk & water until desired consistency + pumpkin pie spice + cinnamon + vanilla + about 3 tbs pumpkin 🎃 + @salbachia (Meal prep idea: Make a bunch & freeze them for the week. Reheat & go!)
Sauce: simmered organic maple 🍁 syrup with 1 tbs pumpkin purée & pumpkin spice + vanilla until warm. This was delicious, almost like an applesauce texture but a sweet maple spiced sauce.

I enjoyed an amazing yoga class this morning!! It feels so good to stretch out your muscles and joints after a week of HIIT and weight workouts! Then, it was time to refuel with some carbs. Complex carbs are essential to a healthy diet and when you greatly restrict your carbohydrate intake for extended periods of time, you can lower your metabolic rate and negatively affect your hormone levels. I’m home!!! First stops are to Kroger and the gym☺️ so excited to eat real food that I can make myself. I love knowing exactly what I am putting in my body. Not to mention I now have access to a blender so I can make smoothies!! I’ve missed this.

I used 53 grams Kodiak Cakes Dark Chocolate pancake mix (6 sp), some water, a few tablespoons of egg whites to bulk it up (0 sp), then topped with blackberries (0 sp), 1 tbsp. pure Canadian maple syrup (3 sp) and 2.5 tbsp. of PB2 (1 sp). 🥞

Today I got to help plan and be a part of @kodiakcakes Christmas. We gave back to the community at my favorite local grocery store and really made an impact! We bought items to donate to Primary Children’s Hospital (pictured) and Ronald McDonald house, then continued to buy random peoples’ groceries in the store. So grateful to work for such a wonderful and giving company! Spreading some Christmas cheer 🎅🏼
I used to not be able to cook a pancake (I thought it was ok to flip them more than once) to save my life, an over medium egg, no way, rice without a rice cooker, wouldn’t even bother attempting lol so glad I finally learned to cook (still learning); I mean we’ve got to eat to survive, might as well make it taste good!
