¡Buenos días! 😁 Today my tummy told me it wants a bit of Mexican but not burritos or fajitas or enchiladas — it wants arroz (rice). So, I said, "¡Esta bien!" and quickly look for Mexican rice recipe on the Tube. Voila, I found one!
The rice wasn't hard to prepare since I've all the ingredients needed. Like our Nasi Tomato (Tomato Rice), the Arroz Mexicana also uses either tomato puree or paste or ketchup (depending on what you have) and does not require evaporated milk. Instead, it uses chicken stock. I also replaced the Serrano pepper with local green chilies.
At the same time, my tummy told me it hadn't had Ayam Masak Merah and Acar Timun Nenas for ages. "¡Esta bien!" I said again and whipped up Ayam Masak Merah (Chicken in Spicy Tomato Gravy) and Acar Timun Nenas (Pickled Cucumber and Pineapple salad) to complement my Arroz Mexicana. In a way, today is Malaysia meets Mexico day for my tummy. Yay! 🤣
