Today I finally have time to bake something ❤ The whole week was so much work to do in the garden. Luckily, my dad is visiting and helping me because I already have a muscle soreness 😅 The reward today was something sweet and a big cup of hot chocolate 😄 The lovely Brigitte @bbbakery.at
has posted such a delicious cake 😍 I am a big fan of her sweet creations and her ❤ So she inspired me to a few tartlets. A delicious chocolate base, a layer of yogurt-semolina vanilla curd and a few delicious apples from the garden with a touch of cinnamon. Not to forget the layer of chocolate crumbles 😁 The hot chocolate I made from oat milk, cocoa and chocolate and on top of it a layer of aqua faba foam with cinnamon. This gives the whole a slightly salty note which I like very much in combination with the chocolate.
chocolate base: 210 g spelt flour, 30 g cocoa, pinch of salt, 80 g coconut blossom sugar, 13 g baking powder, 120 g cold plantbased butter, 2 tbsp cold water
Mix all the ingredients to make a dough. Leave to rest in the refrigerator for half an hour. Fill the molds with some dough. Then add the quarky layer, then the apples and from the remaining dough form crumbles give on top. Bake at 180 degrees between 15-20 minutes.
cheesecake layer: 100 g yogurt, 160 vanilla yogurt, 30 g melted plantbased butter, 2 tbsp coconut blossom sugar, 2 tbsp spelt semolina, 2 tbsp vanilla pudding powder
Mix everything together.
Dice the apples and heat them briefly in the pan with a little bit coconut blossom sugar and cinnamon.
