Yesterday's salad consisting of lamb's lettuce, arugula, tomato, jullienned cucumber, radishes, green onion greens and the best pesto I ever did make. It was created by blending avocado, pine nuts, fresh basil, garlic, green onion whites, mustard powder, lime juice, white whine vinegar, nutritional yeast, black pepper and pink himalayan salt. Fat free dressings are okay, but they never come out as creamy and satisfying as dressings with some source of fat like nuts, seeds or avocado. Do make sure to soak your nuts and seeds for at least 8 hours to get rid of the enzyme enhibitors and the phytic acid. My portions are way bigger than this, by the way. I just needed to plate it nicely for the gram ;)

Fried potatoes 🥔 w/ a spicy tomato sauce! 🌶 This dish is a perfect gluten free alternative (w/o the breadcrumbs) to pasta pomodoro/arrabiata.
Recipe:
✅5 waxy potatoes
✅Sunflower oil
✅Breadcrumbs
✅1 clove of garlic
✅2 small or 1 big shallot
✅15g pine nuts
✅50ml arrabiata sauce
✅10g tomato paste 🍅
✅2tbs sirup
✅Basil 🌿
❎Sriracha (optional)

Boil the potatoes for 10 mins in salt water, let them cool down. In the meantime roast the pine nuts until they scent. Set them aside and start peeling the potatoes and cut them in 5-8mm (0.2-0.3 inches) thin slices. Put some breadcrumbs on the potatoes and fry them with a bit of sunflower 🌻 oil until golden brown. Repeat this process until you all slices are fried and set them aside. Chop the garlic and shallot(s) finely. Reuse the pan you fried the potatoes in to roast the garlic and shallots for 2 mins then add the sirup, arrabiata sauce and tomato paste and cook it for another 3 minutes on medium heat. Serve the dish with some chopped fresh basil and the pine nuts (and sriracha) on top!

OBJEV ROKU: šiška piniová :-) O víkendu jsem u známých poprvé v životě viděla tuto, pro mě naprosto fascinující záležitost - piniovou šišku. No a protože jsem okamžitě nahlas pronesla, že tohle prostě musím mít (no na pokusy, neasi), milá @re.fi.169  mi hned druhý den jednu sehnala. Mají je v @makro_cr, tak mrkněte taky :-) A k čemu je vlastně dobrá?

Tahle šiška má v sobě schované piniové oříšky. Do 6 týdnů by se měla v pokojové teplotě rozevřít sama od sebe a vonět podobně jako borovice. Uvnitř jedné šišky je až sto piniových oříšků ukrytých v černých skořápkách. No a ty oříšky se jí :-) Mňam!

For the basil pesto blend one basil bunch with a bit of salt, pepper and 2 Tbs olive oil. I also added a small spring onion for more flavour.
For the roasted aubergine, I decided to use my combi-steamer this time. Cut aubergine in two and sprinkle with salt and olive oil. Then 20min at 160C with 100% humidity followed by 25-30min at 220C and 60% humidity #done

Alternatively you could just roast the aubergine for 45min at 180C on fan mode.
