So....Does this look like something you would eat?! Yay or nay? Gah..these are my fav- lightly toasted my brown rice wrap in 1 tsp coconut oil and then slathered 1/2 an avocado on this bad boy( God's butter) ...added some super green salad mix into a bowl with lemon juice and Greek dressing and some shredded carrots and some Himalayan sea salt and added it into my wrap....consider me in heaven right about now ❤️🙌 Of course you could always add chicken but I encourage everyone to have at least ..at LEAST one meal a day animal protein free bc it sure is hard for your body to continually digest. Whatever floats your boat though. #plantbasedfoodporn

Listened to an incredibly inspiring and informative talk on using food as a tool for social change by Lauren Ornelas of @foodempowermentproject this weekend at #WorldVegFest. As vegans, many of us make the choice to stop eating animals so that animals don’t have to suffer and die (myself included), and this is a great example of how we are using our food choices as a tool for change, but we shouldn’t stop there! We need to research who makes the food we’re choosing to buy, and ensure that those people, their families, and their communities are being treated fairly. She spoke of some examples that I had never heard of, including chocolate which is often made with the use of child labor, sometimes even slavery, in Africa. The Food Empowerment Project has an app that lists which chocolates they recommend, check it out! It’s not always easy to make the right choices, but can you imagine living your life as a slave because other people wanted chocolate? This was yet another reminder for me to research everything I spend my money on, I only want to be supporting companies who treat EVERYONE involved with respect–we ALL deserve it. #happyveganista

2. Sprinkle Vanilla Powder/Essence on top and the zest of one lime.

Day Six: Potato Salad with a roasted garlic aioli.

1. Boil the potatos and cut into cubes (you can leave the skin on). 2. Cut dried tomatos, red onions, shred lots of basil and roast pine nuts.

3. Roast a bulb of garlic and blend with olive oil, balsamic vinegar and salt til creamy.

4. Mix everything together and add more salt if needed.

Day five: Cole Slaw. * Everyone gets a bowl but I get the biggest :D *

1. Chop cabbage into very fine strips and sprinkle salt on top.

2. Cut onions and apples finely and use a veggie peeler to “cut“ the carrot and cut those strips even finer. 
3. By now the salt should have released sone of the moisture of the cabbage and it's time to knead the cabbage til soft.

4. Add the rest of veggies anf apple and knead a little longer.

5. Add sugar, vinegar and a little bit of vegan mayo for taste.

1.  Cut kale into thin strips, sprinkle with salt and lemon juice and knead the hell outta the kale til soft.

2. Mix tahini, balsamic vinegar and sugar together and drizzle of kale and massage into the kale.

3. Chop tomatos, fried zuchini, avocado and red onions and put on top. 
4. Drizzle balsamic crema on top of everything.
