Wouldn't mind having this amazing & creamy healthy as well as vegan VANILLA CUSTARD COOKIE DOUGH with pecan nuts & a pear. 🍐 Seriously, the consistency was amazing and I went straight into foodheaven. 😍 
My Friday eve is all about relaxing & good food, but tomorrow I‘m off to see my granny. Haven‘t seen her for months.

Hy everybody 🙋 Continuing my simple food series: Easily prepared bruschetta al pomodoro with red and yellow tomatoes topped with my homemade pizza cheese 😊 Here is the recipe again:

Vegan.DIY: Pizza Cheese.
- mix 1 Tbsp tapioca starch, 1/3 cup nutritional yeast and 1 Tsp salt in 1 cup full fat coconut milk until the starch is completely dissolved.
- blend this mixture with 2 cups cooked, diced and drained potatoes (about 300g) while they are still hot.
- mixture should be thick, creamy and gooey.
- top your pizza, lasagna, toast or whatever you prefer with the cheese and bake at 180°C/350°F until golden brown.
- enjoy 😊

Creamy pasta with brussels sprouts! I love the combo between the sweet and creamy cauliflower sauce and the crispy brussels sprouts! To make this: Cook 4 servings of your pasta of choice. For the sauce: 1/2 head big cauliflower steamed, 2 1/2 tbsp nutritional yeast, 1 tsp apple cider vinegar, 1/8 tsp liquid smoke, 1/2 tsp garlic powder, 1/2 garlic powder, 1/4 tsp sweet paprika, 1/4 tsp paprika, 1 tbsp olive oil, pinch of salt and pepper and 1 tsp hot sauce (optional). Add everthing to a blender and blende until creamy and delicious! For the brussels sprouts: preheat your oven at 200C.  Peel and cut your brussels sprouts in half. Put them on parchment paper and drizzle 1 tbsp olive oil, salt and pepper. Pop them in the oven for 15-20 mins or until golden brown. 
Once your brussels are roasted, add the sauce pasta and brussels to a pot on medium heat, mix everything until its warmed through. If you want an easy main for the holidays this is perfect! Totally recommend this!

Olive oil sauteed spaghetti al aglio with garbanzo / hummus, olives, parsley and homemade soy (tvp) fried chorizo. Really inexpensive meal.

Vegan Lasagne, Salad and Garlic bread, Oh so yummy. 
3 onions peeled and chopped
5 cloves garlic
4 carrots grated
125g soya mince (mine was dried so I dehydrated it with hot water)
2 tins tomatoes
1 large tablespoon tomatoe puree
1 veggie stock cube
2 tbs soya sauce
2 tbs Italian herbs
Salt and pepper

About half packet lasagne sheets

4oz Vitalite
2large tbs plain flour
500ml Cashew milk
2tbls Nutritional yeast 
Packet Vegan Cheese grated (200g violife)
Salt, pepper, pinch cayyene pepper and half a grated nutmeg. 
Cook, assemble &bake for 45mins 180c.

This simple pasta dish is a great easy Saturday night dinner. Perfect for all the family and can be adapted for you meat eaters and veggies. 
Recipe serves 4 
240g wholewheat pasta 
1 pepper 
1 courgette 
100g mushrooms 
400g Passata 
80g cheese (vegan or normal) 
Boil the pasta, whilst this is cooking you can cook up the veg in the pan. Drain the pasta, add the veggies and passata. 
Put in an oven proof dish top with your cheese and bake in the oven for 10-15 minutes.

If you want to add in a meat you can but even when I ate meat years ago this was a favourite of mine without it.

Momentan gibt’s nicht wirklich was Interessantes zu erzählen. Ich geh morgens im Dunkeln aus‘m Haus und komm abends im Dunkeln wieder heim. Es vergeht seit SemesterBeginn keine Woche ohne einen Bericht, der geschrieben und vor der Deadline abgegeben werden muss. Also gehen meine freien bzw halbfreien Tage auch noch drauf. Sehr schön. Dafür läuft die Ernährung gut und ich habe die nächsten 5 Wochen beim Arbeiten frei, weil die Überstunden bis Ende Dezember weg sein müssen. Eigentlich habe ich mir vorgenommen danzu lernen; bin mal gespannt wie viel von meiner freien Zeit ich am Ende wirklich dafür investiere.
Naja, ich genieße nun meinen Feierabend und wünsche euch noch ein schönes Restwochenende. 🤗
