Beetroot pumpkin soup by @thewhitechestnut 🍁
Recipe: 2 medium size beetroots. A zucchini. Ared onion. 1/4 pumpkin. 1/4 olive oil. 1 tsp dried rosemary. 1 tsp Himalayan salt. 3 cups of water.
To prepare the creamy cheese: 1/4 cup raw cashews. 1/3 cup almond milk. 1/4 cup nutritional yeast. A pinch of Himalayan salt.
Toppings: Some fresh oregano leaves. Some chilly flakes. Some crunchy hemp seeds.
Preheat the oven to 200ºC, in an oven tray add the veggies, cut into squares, beetroots, zucchini, onion and pumpkin, then top it with the olive oil and the rosemary. Bake it until soft at 200C for around 20 minutes.
Transfer the veggies to a blender and add 3 cups of water and salt, blend it until smooth, add more water if needed.
To make this yummy cheese sauce mix in a blender or food processor, 1/4 cup raw cashews, 1/3 cup almond milk, 1/4 cup nutritional yeast and a pinch of Himalayan salt.
To serve, pour some beetroot pumpkin soup, top it with some cheese sauce and add fresh oregano leaves, chilly flakes and some crunchy hemp seeds. -

Comida rica de domingo 😛.
Camote asado al horno, hummus de betarraga y pepino con tomates cherry.
Les dejo la receta del hummus de betarraga que es mi favorito de todos:
- 1 taza de garbanzos cocidos
- 1/4 de betarraga cruda bien lavada y pelada
- 1 cucharada de semillas de sésamo tostadas
- 1 manojo de cilantro
- 1/2 cucharadita de jengibre en polvo (o 1 diente de ajo)
- Una pizca de sal de mar
- Jugo de 1/2 limón
- 1 cucharada de aceite de oliva
- 3 cucharadas de agua
* en caso de tener tahini reemplacen el aceite de oliva y el sésamo por 1 cucharada de tahini.
Se procesan todos los ingredientes juntos y listo 👌🏽. Un hummus delicioso y muy versátil. Queda perfecto con ensaladas, dip para untar y también en sandwich.

El pepino lo corté con mi nueva @spiralizer.cl y quedaron bellos! Para la próxima probaré con las cuchillas especiales para dar forma de tallarín a ver qué tal.

SALAD:
1cup of lettuce, 1 carrot, pepper,tomatoes, cucumber, radish, mushrooms,beetroot, onion
SAUCE: 
100ml vegetable broth
1Tbsp olive oil, 1Tsp Sugar
2Tbsp  vinegar
1tsp “Bella Italia“ Spice (@koro_de)*
2Tsp sunflower seeds
VEGGIES
1cup peas, 1cup Broccoli and cauliflower
3Tbsp Soy yoghurt

Cook the pasta and the veggies and cut up the salad ingredients, mix the sauce and add to the salad veggies. Place the pasta in one half of the bowl and the veggies and salad in the other half. Add soy yogurt and some (sesame) seeds. Enjoy!🤗

In some rice flour I put 300g of 7 day old fermented raw almond cheese with garlic & delicated yeast that has a flavor of cheese 😲
Added warm water, ground sesame, ground flax, ground pumpkin seeds, powdered garlic, chives, chilli and salt.
It is super delicios and actually has the real taste of cheese. *Oven baked for 20min ☺

Dazu getoastetes Toasbrot mit veganem Aufstrich von @attila_hildmann. Wirklich super lecker! Für zwischen durch gibt es etwas Obst. Heute ist wieder Yogamonday, ich freue mich schon riesig darauf 🤸🏻‍♀️ Diese Woche wird eine kurze Woche für mich sein, ab Donnerstag hab ich frei. Dann steht bei mir Kästen ausräumen auf dem Plan. Platz für Neues zu schaffen 💁🏻 Genießt den Tag 💚🌱

To that toasted bread with vegan spread from @attila_hildmann. Very delicious! For in between there are some fruits. Today is my yoga-monday, I'm looking forward to the lesson🤸🏻‍♀️. This week will be a short working week for me, I'll be off from Thursday. My free days I'm going to use for organise my wardrobe to make some space for new stuff. 💁🏻 Enjoy your day! 💚🌱
