Our fresh French chicken is rubbed with a spice blend then spatchcocked and pinned with bamboo. We leave it on our smoking shelf for 4 hours leaving it juicy and tender. Our UK free range pork is left to hang in our Himalayan salt brick dry ageing room for 10 days which allows the flavour to intensify. Then it's smeared over a house blend rub of fennel and cumin, then rolled and smoked for 8 hours... Served with Savoy cabbage and an orange mustard marmalade #slowcookedfridays
